15 min snack: Warm Apple & Walnut Skillet

What we’re eating: 1 sliced apple, 1.5 tbsp coconut oil, spices (essential: lemon juice, cinnamon, nutmeg; optional: clove, cardamon, ginger), 1/2 cup crushed walnuts, and 1 tbsp honey. Be extra and top with Rebel keto-friendly ice cream (I used salted caramel)*. This makes two servings - see the IG slides below for how to prep the skillet!

Why we’re eating it: Because it’s warm and delicious and you probably bought a lot of fruit you totally meant to take to lunch and forgot… but you are NOT going to let those apples go to waste! A skillet is a great way to use those slightly-less-than-crisp apples (or pears. or even cherries, why not). The walnuts and apple are packing fiber and essential nutrients; the walnuts and coconut oil are adding those essential fats!

When we’re eating it: Whenever we freaking want. This skillet is so simple to prep and, for me, its warmth (both temp and spices) makes it very comforting. This is a really nutritious add-on to your day, once you’ve hit your protein goals. Or before you hit them because you know what you’re putting on your plate later. Is this a brunch skillet? Yes. Is this a dessert skillet? Yes. Is this a post-run snack skillet? Yes. Is this a pre-workout fuel skillet? You get it.

What if you’re not moving? Can you still eat those simple carbs? Yes - even though this apple skillet is sweet, the sweetness comes from the apple (1/2 an apple, if you’re splitting the skillet) and a small amount of honey (and maybe the Rebel keto-friendly ice cream). Plus there’s 7g (5g if you skip the Rebel), which will help slow absorption and reduce blood glucose spikes. It’s still a good idea to take a mini-movement break after any meal, but this skillet is making it easy to feel decadent and be delicious while staying metabolically balanced.
